Korean Glass Noodle Stew. Dangmyeon Noodles – it has many other names: Korean Vermicelli Noodles, Korean Sweet Potato Noodles. In our kitchen, I only reach for Dangmyeon noodles 2-3 times a year. So I always see it, in the back of the upper shelf of my pantry – reminding me to beat the expiration date heh! But when I do cook with it, I reminded about its versatility. Dangmyeon noodles have a wonderful texture – feels slippery, bouncy and slightly chewy. So I thought – why not include them as the main ingredient in a stew?
