Perfect for Cheese and easier to clean than most.HOW TO CLEAN:  Rinse thoroughly with cold water first and then wash with hot water and a drop of bleach. We do not recommend using commercial detergents for this product.  If mat retains any odor after cleaning, try hanging outdoors in the sun for awhile, this is the traditional method used in Europe
